French Grape Ales
Master brewer Rémy Maurin partners with select organic vineyards in Alsace, the Loire Valley, and the Rhône Valley to deliver the grapes straight to the brewery when they’re harvested. The fruit is de-stemmed and pressed and then goes into fermentation tanks to be macerated in their own juice. Indigenous yeast is used to start the natural fermentation process to which beer wort is added for co-fermentation. The French Grape Ales are then aged in oak barrels or in amphoras for several months before being bottled.

Cantina Brassicola – Italian Barrel-Aged Wild Ales
Yeast is the new hops! Since 2016, four guys from Bologna have started their journey through wild yeast, barrels, fruit, and Italian Wild Ales. This “Cantina Brassicola” patiently ages their beers in their barrel cellar and then are bottle conditioned. Their Italian Grape Ales are made from Grechetto (Û Baccabianca – White) and Centesimino (Û Baccarossa – Red) grapes from local Biodynamic and Organic vineyards in the Emiglia-Romagna region.
