50-year-old vines. Soil dominated by the sandstone schist. Hand harvested with parcel selection for the ripest grapes on 9th and 11th September. Immediate pressing and controlled temperatures. Vinification in steel tanks for part of the harvest, the remainder was vinified in new oak barrels. Only 1,800 bottles of this wine were produced.
This grape variety is astonishing. It must be delicately pressed, the must must be left to settle patiently, then vinified gently. And we obtain a brilliant white wine with scents of citrus fruits (yuzu, lemon), white fruits (pear, peach) and star anise. The palate is lively in its richness and rich in its liveliness. It is said that it is in the simplest wines that we see the talent of the winemaker. BINGO!
AOC Faugères
50% Syrah, 40% Mourvèdre, 10% Grenache
Vines between 30 and 60 years old. Soil dominated by the sandstone schist. Hand harvested with parcel selection for the ripest grapes (between 12 September and 2 October). Long maceration periods at high temperatures (25 to 30° C) even, and above all, after completion of the sugar cycle. Extraction by repeated and alternating classic techniques: pumping over, drawing off.
This vintage, year after year, is characterized by balance, harder to obtain for a concentrated wine. One is immediately reassured by the deep purple hue color. The aromas have been slowly but inexorably developing since leaving the aging cellar: Burlat cherry, violet, blackcurrant jam, ink and even Mirabelle plum and mango. Powerful, muscular tannins.
